Savory Cheese and Herb Waffles
These savory waffles were born from a happy accident when I ran out of sugar while making traditional waffles for houseguests. I improvised with cheese and herbs from my garden, creating a savory version that has since become more popular than the sweet original. They’re equally delicious for breakfast, brunch, or as a base for dinner dishes.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 large eggs
- 1 3/4 cups buttermilk
- 1/3 cup unsalted butter, melted
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 3 tablespoons fresh chives, chopped
- 2 tablespoons fresh thyme leaves
- 1 tablespoon fresh rosemary, finely chopped
For serving (optional):
- Poached or fried eggs
- Sliced avocado
- Crème fraîche or sour cream
- Smoked salmon
- Crispy bacon
- Roasted cherry tomatoes
Instructions
- Preheat your waffle iron according to manufacturer’s instructions.
- In a large bowl, whisk together flour, baking powder, salt, pepper, and garlic powder.
- In a separate bowl, beat eggs, then whisk in buttermilk and melted butter.
- Pour wet ingredients into dry ingredients, stirring just until combined.
- Fold in cheddar cheese, Parmesan, chives, thyme, and rosemary.
- Lightly coat waffle iron with cooking spray.
- Pour batter onto waffle iron (amount will depend on size of your waffle maker).
- Cook until golden and crisp, about 3-5 minutes.
- Keep waffles warm in a 200°F oven while cooking remaining batter.
- Serve with desired toppings.
Recipe Notes
- These waffles freeze beautifully. Cool completely, then freeze in a single layer before transferring to a freezer bag.
- Reheat frozen waffles in a toaster for a quick breakfast.
- Try different cheese combinations such as Gruyere and thyme or blue cheese and walnut.
- For a spicy version, add a diced jalapeño or a dash of hot sauce to the batter.
