Filipino Mango Float
My introduction to mango float came at a Filipino friend’s celebration where this unassuming dessert stole the spotlight. Despite looking like a simple layered refrigerator cake, the combination of sweet ripe mangoes, cream, and graham crackers transformed into something magical after chilling.
This no-bake dessert relies on the quality of its star ingredient – the mango. My friend’s grandmother insisted that only the sweetest, ripest Philippine mangoes would do, but I’ve found that any variety at peak ripeness creates a dessert that’s greater than the sum of its humble parts. The contrast of creamy, crunchy, and fruity elements makes this a perfect ending to a meal, especially on warm days when turning on the oven is unthinkable.
Ingredients:
- 3 cups heavy whipping cream
- 1/2 cup condensed milk
- 1 teaspoon vanilla extract
- 24 graham crackers (about 3 sleeves)
- 4-5 ripe mangoes, peeled and thinly sliced
- 2 tablespoons crushed graham crackers, for topping
- Mint leaves, for garnish (optional)
Instructions:
- In a large mixing bowl, beat heavy cream until soft peaks form
- Gradually add condensed milk while continuing to beat
- Add vanilla extract and beat until stiff peaks form
- Line the bottom of a 9×13 inch rectangular dish with a single layer of graham crackers
- Spread one-quarter of the cream mixture evenly over the graham crackers
- Arrange one-third of the mango slices in a single layer over the cream
- Repeat layers twice more: graham crackers, cream, mangoes
- Top with a final layer of graham crackers and the remaining cream
- Sprinkle crushed graham crackers over the top
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight
- Garnish with mint leaves if desired
- Cut into squares and serve chilled
Note: For the best texture, allow the dessert to refrigerate overnight so the graham crackers soften perfectly. The mangoes should be sweet and ripe but still firm enough to slice neatly. For a variation, try adding a thin layer of dulce de leche over each graham cracker layer, or substitute other tropical fruits like peaches or berries when mangoes aren’t in season.
