Morning Souvlaki Breakfast Wraps
During a cooking class in Athens, our instructor showed us how traditional Greek flavors can be adapted for breakfast. She created these morning wraps using souvlaki-style ingredients, explaining that while not traditionally a breakfast food in Greece, the combination of protein and fresh vegetables makes for an energizing start to the day that tourists and younger Greeks have embraced.
Ingredients
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Greek yogurt
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat pita breads
- 1/2 cup tzatziki sauce
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup kalamata olives, pitted and chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh dill, chopped
Instructions
- In a bowl, combine olive oil, lemon juice, yogurt, garlic, oregano, thyme, salt, and pepper.
- Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or overnight in the refrigerator.
- Heat a skillet over medium-high heat. Add marinated chicken and cook until golden and cooked through, about 8-10 minutes.
- Warm pita breads according to package directions or in a dry skillet.
- Spread 2 tablespoons of tzatziki sauce on each pita.
- Divide the cooked chicken among the pitas.
- Top with cucumber, tomatoes, red onion, feta cheese, and olives.
- Sprinkle with fresh mint and dill.
- Fold the bottom of each pita up, then fold in the sides to create a wrap.
- Serve immediately, with additional tzatziki on the side if desired.
Recipe Notes
- For a vegetarian version, substitute the chicken with chickpeas or grilled halloumi cheese.
- Prep the vegetables the night before for a quicker morning assembly.
- These wraps can be assembled and wrapped in foil for an on-the-go breakfast.
- Try using lamb or pork in place of chicken for different flavors.
