Honey Tahini Breakfast Toast
While staying with a Greek family on the mainland, I noticed they often spread tahini on bread and drizzled it with honey for a quick breakfast. The mother explained this combination has been enjoyed in Greece for generations, particularly during fasting periods when dairy is avoided. My version elevates this simple breakfast with fresh fruit and a sprinkle of nutritious seeds.
Ingredients
- 4 slices hearty whole grain bread
- 1/2 cup tahini paste
- 4 tablespoons honey, plus more for drizzling
- 1 large banana, sliced
- 1 apple, thinly sliced
- 2 tablespoons pistachios, chopped
- 2 tablespoons sunflower seeds
- 2 tablespoons sesame seeds
- 1 teaspoon ground cinnamon
- Pinch of sea salt
- Fresh mint leaves for garnish
Instructions
- Toast the bread slices until golden brown and crisp.
- While bread is still warm, spread 2 tablespoons of tahini on each slice.
- Drizzle each slice with 1 tablespoon of honey.
- Arrange banana and apple slices on top of the tahini and honey.
- Sprinkle with pistachios, sunflower seeds, and sesame seeds.
- Dust lightly with cinnamon.
- Add a small pinch of sea salt to each toast.
- Garnish with fresh mint leaves.
- Drizzle with additional honey if desired.
- Serve immediately.
