Avocado Breakfast Quesadillas
These quesadillas were created during a weekend at our beach cottage when fresh avocados were abundant but kitchen equipment was minimal. Looking for a simple yet satisfying breakfast using pantry staples, I developed this quick recipe that has since become a weekday breakfast favorite. The contrast of crispy tortilla, creamy avocado, and melted cheese makes these quesadillas both comforting and energizing.
Ingredients
- 8 flour tortillas (8-inch size)
- 2 ripe avocados
- 1 lime, juiced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups Monterey Jack or pepper Jack cheese, shredded
- 4 large eggs, scrambled
- 4 tablespoons butter
- 1/2 cup pico de gallo
- 1/4 cup cilantro, chopped
- Hot sauce, for serving
- Sour cream, for serving
Instructions
- In a medium bowl, mash avocados with lime juice, garlic powder, cumin, red pepper flakes, salt, and pepper.
- Heat a large skillet over medium heat.
- Lightly butter one side of each tortilla.
- Place one tortilla in the skillet, buttered side down.
- Spread a layer of mashed avocado over half of the tortilla.
- Top with a portion of scrambled eggs and a generous sprinkle of cheese.
- Fold the empty half of the tortilla over the filled side to create a half-moon shape.
- Cook until bottom is golden brown, about 2-3 minutes.
- Carefully flip and cook until second side is golden and cheese is melted, about 2 minutes more.
- Repeat with remaining ingredients to make 4 quesadillas.
- Cut each quesadilla into wedges and serve immediately.
- Garnish with pico de gallo, cilantro, hot sauce, and sour cream.
Recipe Notes
- Add cooked bacon, ham, or chorizo for a meatier breakfast quesadilla.
- Try adding a thin layer of refried beans for extra protein and flavor.
- For a spicier version, mix diced jalapeños into the avocado mash.
- These can be made ahead and reheated in a dry skillet until crisp and warmed through.
