Japanese Miso Butter Microwave Corn (Japanese/Sides)
During a homestay in rural Japan, I was surprised when my host mother used the microwave to prepare corn on the cob. She explained that while traditional cooking methods are revered, modern Japanese home cooks embrace time-saving techniques for weeknight meals. Her secret was a compound butter infused with savory miso that transformed ordinary corn into something extraordinary.
This recipe honors that practical approach while introducing the uniquely Japanese combination of sweet corn and umami-rich miso. The microwave not only cooks the corn quickly but also helps the flavored butter penetrate the kernels for maximum flavor with minimal effort – a perfect example of how Japanese cuisine balances tradition and innovation.
Ingredients:
- 4 ears fresh corn, husks and silk removed
- 4 tablespoons unsalted butter, softened
- 2 tablespoons white miso paste
- 1 tablespoon mirin (Japanese sweet rice wine)
- 1 teaspoon soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon shichimi togarashi (Japanese seven-spice blend) or cayenne pepper
- 1 tablespoon fresh chives, finely chopped
- 1 sheet nori (seaweed), finely crumbled or cut into thin strips
- Sesame seeds for garnish
Instructions:
- Wrap each ear of corn in a damp paper towel
- Place on a microwave-safe plate
- Microwave on high for 4-5 minutes, turning halfway through cooking
- Meanwhile, in a small bowl, combine softened butter, miso paste, mirin, soy sauce, and sugar
- Mix until completely smooth
- Stir in shichimi togarashi or cayenne pepper
- Carefully remove corn from microwave (it will be hot)
- Unwrap corn and place on serving plate
- Spread miso butter generously over each ear while still hot
- Sprinkle with chopped chives, crumbled nori, and sesame seeds
- Serve immediately
Note: The miso butter can be made several days in advance and stored in the refrigerator – just bring to room temperature before using. White miso provides a milder, sweeter flavor, but red miso can be substituted for a stronger umami punch. If fresh corn isn’t available, frozen corn on the cob works well too, just increase microwave time by 1-2 minutes.
