Ham and Cheese Breakfast Sliders
There’s something irresistible about warm, gooey sliders straight from the oven. These breakfast sandwiches were born during a holiday weekend with extended family, when I needed a breakfast that could feed a crowd without keeping me in the kitchen all morning. The sheet pan preparation allows for assembly the night before, making morning hosting effortless while still delivering a hot, impressive breakfast.
Ingredients
- 12 Hawaiian sweet rolls (kept intact as a slab)
- 8 large eggs, scrambled and seasoned
- 8 slices ham
- 6 slices Swiss cheese
- 6 slices cheddar cheese
- 1/4 cup green onions, chopped
- 2 tablespoons butter, melted
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1 teaspoon poppy seeds
- 1/2 teaspoon garlic powder
- 1/4 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- Without separating the rolls, slice the entire slab horizontally to create a top and bottom.
- Place the bottom half in the prepared baking dish.
- Layer half the cheeses over the bottom layer.
- Arrange ham slices evenly over the cheese.
- Spread scrambled eggs over the ham.
- Sprinkle green onions over the eggs.
- Top with remaining cheese slices.
- Place the top half of the rolls over the filling.
- In a small bowl, mix melted butter, mustard, honey, poppy seeds, garlic powder, and Worcestershire sauce.
- Brush the butter mixture over the top of the rolls.
- Cover with foil and bake for 15 minutes.
- Remove foil and bake for another 5-7 minutes until tops are golden brown.
- Let rest for 5 minutes before cutting into individual sliders.

- Make ahead option: Assemble the night before, refrigerate, and add 5 minutes to covered baking time.
- Try different meat options like bacon, sausage patties, or Canadian bacon.
- Add sliced avocado or tomato just before serving for freshness.
- For a spicy kick, add a few dashes of hot sauce to the egg mixture or use pepper jack cheese.
